A Story That Began in Patagonia

Dante Ferrero was born in Argentina's Patagonia region, near the city of Neuquén. Growing up around the kitchen, he developed a passion for cooking at an early age, inspired by his father and the traditions of open-fire cuisine.
"My father always said, 'I would never serve my guests anything I wouldn't serve my own children.' That philosophy still guides every dish I create today." — Dante Ferrero
His Patagonian roots shaped a philosophy built on respect—for exceptional ingredients, for time, and for letting natural flavors speak for themselves.

After spending more than twenty years living and cooking in Mexico, Dante has created a distinctive culinary style that blends Argentinian grilling traditions with Mexican ingredients, techniques and flavors. Today, his work is recognized by food critics and enjoyed by guests from around the world.

A Career Built Around Fire

Dante first established himself in Monterrey with Neuquén, an Argentinian restaurant that became one of the country's most respected destinations for authentic grilled cuisine for more than a decade.

He later founded Alodé, where he expanded his culinary vision by incorporating regional Mexican influences while deepening his expertise in every aspect of beef—from sourcing and dry aging to butchery, cooking techniques and service.

Both restaurants were recognized among Mexico's 250 Best Restaurants by Culinaria Mexicana, reinforcing Dante's reputation for culinary excellence and innovation.

The Chef Behind #LaVacaEsMía

Dante's passion for understanding beef extended far beyond the kitchen.

For years, he traveled throughout Mexico cooking whole cattle over open fire formore than 24 hours, an ambitious project that became known as #LaVacaEsMía.

Having prepared more than 93 whole cattle, Dante became one of Latin America's leading experts in traditional slow-fire cooking techniques.

When Fire Becomes Your Passion

"Fire—and the aromas it creates while cooking—will never stop fascinating me." — Dante Ferrero
For Dante, fire has never been simply a cooking technique; it is a philosophy. Every cut of beef deserves its own approach. There are no universal recipes—only experience, patience, observation and respect for the ingredient.

Dry aging perfectly reflects that philosophy. Between 21 and 30 days, beef develops remarkable tenderness. Around 45 days, flavors become richer and more complex. By 60 days, only exceptional cuts and carefully controlled aging processes reveal the extraordinary depth and character sought by true steak enthusiasts. That relentless pursuit of understanding beef has shaped Dante Ferrero's entire career.

The Complete DANTE Experience

Every cut served at DANTE is the result of decades of research, travel and refinement. Each selection is carefully chosen and prepared to express its fullest potential over live fire.

At DANTE Brasa y Fuego, charcoal, open flames and the wood-fired oven take center stage. Nothing is hidden behind unnecessary sauces or complicated techniques. Exceptional ingredients are allowed to shine naturally.

Located in the heart of Polanco, DANTE offers an inviting setting equally suited for business dinners, celebrations, romantic evenings and memorable dining experiences.
